It depends on for what purpose you wanted to learn Sanskrit.

Most people learn Sanskrit to learn and understand the Vedas, Bhagavad Gita, Ramayana, Puranas etc in their original form.

There are two types of Sanskrit literature and they are based on Sanskrit grammar.

First one is Vedic literature and the second one is classical literature. Classical literature includes literature of Kalidasa, Dandin, Bharavi etc.

If you want to learn basics of classical literature, then it will take around 6 months regular study.
Understanding original Ramayana and Mahabharata might take around 2 years.
Vedic literature takes around 7 to 8 years of consistent study.

Basically it differs person to person and its only a general timeline.
